About Me

I am a dairy farmer in the Greenville, SC area. I have been farming here for 31 years. As an "early" farmer, conventional farming was all I understood--chemicals, purchased fertilizers, feeding the cows whatever it took to "make milk". As far as I knew, I was successful, but that kind of success was "harmful". The land was being plowed, the crops were being sprayed to keep out weeds, and the plants were being allowed to grow to their fullest heights, and then were chopped up for feed. According to the 'experts" this was the way to farm. One day my cows decided to "show " me who was in charge and they broke our of the confined area, went to a pasture that was being readied for plowing,fertilizing,planting. In that pasture was young, April growth of lambs quarter, fescue, and the "weeds". The cows mowed this field for me and came back to the barn that evening with more milk . This led me to what I refer to as "a Divine" intervention in my life. I studied the cows, let them out to other "April" pastures with "weeds" and found some very interesting behavior.

All of this developed into Clemson University doing a 3 year research grant on my farm researching  various  forages that were plante to "make milk" and was quite a successful project. We learned that if a cow could graze April type growth of a non mature plant, she would make milk. No longer was I having to plow, spray,and purchase fertilizers. The soil began to recover, the earthworms came back, and plants grew only for the nutrient value-- quality, not quantity.

As a result of this change in our lives, we now bottle Happy Cow Creamery milk. We low temp pasterrize, do not homogenize, and have what we think is "the best milk" you can find, but the most important thing  aspect is that it is healthy, and  the COWS ARE HAPPY!

Moonshine Madness at Dark Corners Distillery

Celebrate the Southern Traditon of Moonshine with Slow Food Upstate at Dark Corners on January 15

This event will feature a special batch of Moonshine prepared with local Pumpkin Town corn by distiller and owner Joe Fenten. As a part of Slow Food Upstate's mission to educate the community with regards to local food, local food traditions, and sustainability, we would like to point out some of the "green" effects of this event...
